These small, tender squid are served in a delicious sauce made from tomato, onion and squid ink. Serve warm with some good bread and some crusty bread. Far from being seen as a cheap alternative to fresh seafood, these carefully preserved squid are seen as a gourmet treat. The seas off the coast of Galicia in Northwest Spain are cool and rich in nutrients, making them an incredible fishing ground. Conservas de Cambados is located close to one of spain's largest RÃas (Estuaries), known as the "RÃa de Arousa". Their facilities are very close to where the seafood is harvested, so they are able to use the freshest squid and shellfish available.
